Build vgi_rpc.Identity.v1 for identity, or null when the deployment
configured neither hook.
Only the methods whose hooks exist are registered, so the binding’s method
set – and therefore its protocol_hash – narrows with the deployment. A
server offering half the methods is not offering the same surface, and saying
so in the hash is the point rather than a side effect.
Both methods are unary and return their payload as serialized Arrow IPC in a
single result binary column.
